I have been dreaming of the elderberry pancake syrup my dad used to make from the big purple elderberry bush we had back in Minnesota.
So I looked up elderberry in Japanese, and found ニワトコ. All of a sudden, I see them EVERYWHERE.
Then I dug a bit deeper and found they are (probably) Japanese Red Elder, or Sambucus sieboldiana.

My mountain is covered with them. I should rename the mountain from "Yokone Yama" to "Niwatokosan."

We have a couple of Elderflower trees on our land but normally let the pigeons have the berries as we didn't know you could use them so I'd be interested to see how you make your syrup. It's maybe something we could use at home and in the cafe that comes from our land.
