Oyster mushrooms are pretty common in Kansai.
in Japan they are known as eringi mushrooms.

Now you know, oh great one.
You can grow them in straw or sawdust and add them to your arsenal.
I way prefer them to shiitake and they're just the thing when you want something to remind you of school days like, let's say; chicken supreeeeeeeeeeeeeme.

We just got plug spawn for shiitake and nameko from our local seed shop, they also sold us an appropriate-depth drill bit. Our neighbour who has his fingers in a number of different pies got as some appropriately-sized logs, sakura for the nameko and some other hardwood for the shiitake.
