Yep the animal must get pregnant every year and ideally for cheese making, two goats is best, with staggered pregnancies because the quality of the milk changes at during stages of lactation which can make a huge impact on the taste, texture, stretchiness of the cheese..it can be corrected by adding enzymes and carefully monitoring ph of the milk but it's easier to just switch over to the "fresher" milk.

Feta is pretty easy to make, maybe I'll throw another tutorial on here sometime. It can be made with UHT milk, though it will fall apart if you put it in brine. It will taste decent though, and it will crumble like a feta should.

Mrs N loves Feta and Haloumi cheese and would love to know how to make them, although I'm not too keen on Haloumi myself. How easy is ricotta or mascaporne cheese to make ? After mozzarella those are two of my favourites.
