Manly low carb recipes.

I know that men need more many MENues.
There are plenty of yummy things one can have on a low carb diet and not get bored.
Of course it can be more spendy than filling up with rice and pasta, but if you are clever there are ways and means.

But first, just to get you started, a good thing to cook on the weekend, that ends up cheaper than mince, and can last you several days and be consumed in a variety of ways.

Gyoumu Super sells blocks of pork that is actually cheaper than mince and chicken.
Get a 2kg ish hunk. It will set you back 2~3000yen.

Poke holes in the pork with a knife and stick in a few cloves of garlic.
Rub the outside with olive oil and season generously with salt and pepper.
Braise the block of meat in a frying pan, to seal the outside as well as caramelize a nice bit on the outside.
If your frying pan has a removable or oven proof handle, you can now just cover the pan with aluminum foil and pop it in the oven 170C for 1.5 hours.
*if not, then move to a roasting pan and cover with foil*
When the time is up, baste the pork and cover it with foil and put back in the oven for another hour.
After that, remove the foil, drain the juices and oil (you can reduce this in a pan to create a good jus with seasoning you like) and return to the oven for another 1 hour.
The pork should be falling apart now.

You can slice it and eat it hot, shred it into green salad served with avocado. You can douse it in mayo and roll it up in lettuce leaves and eat like a taco. You will be able to get quite a few meals out of this.

Good accompaniment for the first day when you're eating a couple of slices of it hot is

Fried Chicken for Low Carb Men Who Miss Karaage

Southern Fried Version Marinade:
1Tsp Salt
1Tsp Pepper (freshly ground black is best)
1Tsp Garlic Powder or a few cloves of crushed garlic
1Tsp Paprika Powder (or cayenne pepper if you prefer)

Asian Fried Version Marinade:
1Tablesp Soy Sauce
1Tsp Garlic Powder or a few cloves of crushed garlic
1Tsp Ginger Powder or freshly grated ginger or a squeeze from an S&B tube.

You will need
Chicken pieces (either cut into chunks like karaage or thighs and drumsticks, your choice)
Coconut Flour (ココナッツ粉 on Amazon or Profoods, or you can just blitz desiccated coconut in the food processor)

Put the marinade of your choice ingredients into a large ziplock freezer bag
Add chicken and make sure the marinade stuff gets all over it by massaging the bag.
Put the bag into the fridge overnight or for at least 2 hours.

When the chicken is ready, coat it with coconut flour, which you can also do in a freezer bag doing one piece at a time. (so the coconut flour doesn't get soggy)
Deep fry chicken in vegetable oil of your choice until golden brown and crispy.

Serve with a nice green salad or some steamed veg drenched in butter.... or cauliflower gratin .. or DEEP FRIED Camembert, which you can bread with desiccated coconut.

That just sounds sooooo tasty, we've got nearly all the ingredients so just need to order up some coconut flour and we're away.

NO CHURN ICE CREAM:

Nutritional values (per serving, ~ 1 cup, 2 scoops):

Total Carbs 2.3 grams
Fiber 0 grams
Net Carbs 2.3 grams
Protein 5.1 grams
Fat 22.2 grams
of which Saturated 13.1 grams
Energy 238 kcal
Magnesium 8 mg (2% RDA)
Potassium 93 mg (5% EMR)
Macronutrient ratio: Calories from carbs (4%), protein (9%), fat (87%)


Ingredients (makes 6 servings):
4 large eggs, separated
¼ tsp cream of tartar
Splenda to taste
1 ¼ cups heavy whipping cream or coconut milk (300 ml / 1.1 fl oz)
1 tbsp sugar-free vanilla extract or some vanilla beans.

This ice cream does go hard in the freezer after about 4 hours. If you want to keep it smooth and fluffy you can add one of the following or put it in single serving containers so that it softens quickly when removed from the freezer.

Vodka or other similar alcoholic drink - about ¼ cup. Vodka is best as it's neutral and leaves no aftertaste.
MCT oil or coconut oil - about ¼ cup.

Instructions:
Separate the egg whites from the egg yolks. Start whisking the egg whites and add the cream of tartar. As the egg whites thicken, slowly add the powdered Splenda.
Whisk until they create stiff peaks. In another bowl, whisk the cream...
IF YOU ARE USING COCONUT MILK.. see this

until soft peaks form when the whisk is removed. Be careful not to over whisk the cream. In a third bowl, mix the egg yolks with the vanilla extract and vanilla powder (if used).
Slowly fold the whisked egg whites into the whipped cream. Then add the egg yolk mixture and gently fold in using a spatula until well combined.
Place the mixture in a loaf pan or a freezer-friendly container and freeze for 2~4 hours.

That no churn icecream is a really good base for other flavours.
You can add instant coffee, peanut butter, cocoa powder, macha powder..
Or you can add scotch whiskey for a Don Pedro... or .. or.. RUM.. (but no raisins.. they're high in sugar)

If you have an icecream machine, then the sky is the limit really for making icecream.
As long as you use Splenda (they sell it on Amazon and at Costco) icecream is a good fatbomb to have.
You can use coconut milk or whole cream.. and of course lots of lovely egg yolks.

Vodka ice cream could very well replace Kirin's Chu-Hi smoothies from last summer :D

I wonder if you can get an alcoholic Halo-Halo ? :think:
