I think it can't really be replicated. For melty cheese, 'merican cheese just works better. The only exception to this was this high end cheese sandwich truck that used all kinds of artisan cheeses and breads but while it was amazing, it wouldn't work as well on a burger.

Marunaka, Maxvalu etc. Its pretty common but beware, it is addictive.
It is the best for grilled cheese (made in the frying pan with that 10 slice sammich bread that comes in the 2 adjoined plastic cases) but not recommended for proper paninni which requires proper cheese and proper bread.

That's "World Select" plastic!!

Seriously though, try melting a slice of Colby jack on a burger. Much better than those individually wrapped slices yet still melts pretty evenly with a less sour taste. I wouldn't say they're inedible but those slices are in the "cheese adjacent" category with nacho cheese and spray cheese. I know the difference might not seem like much from a Euro perspective but I think the slices are more loaded with more emulsifiers and preservatives. The blocks of 'merican and Colby Jack may be homogenized and "aged" in sterile plastic but it has it's place...and right, I wouldn't want them on a panini but on a burger, it's just right.

I have to pick up some colby jack next time we're in Costco.

Normally I'd use some Emmental or Gruyere cheese from Metro for a gourmet experience.
