This is the amaranth we grew this summer: https://www.kitazawaseed.com/seed_384-145.html.

Leaves were nice and tender, particularly when harvested young. Lasted well into August down here.

Of course! This pak choi also did great in the SoCal heat: https://www.kitazawaseed.com/seed_656_1-236.html.

Like the description says, the leaves are similar to a more robust lettuce, but the flavor does get more intense the longer you wait to harvest. It was super productive though.
